Lemon Ginger Filets

 Ingredients

2- 6 oz (175g) lemon sole or witch fillets, fresh or frozen
1/2 oz (15g) butter
1 small onion, finely chopped
1 tablespoon (15ml) fresh chopped parsley
2 tablespoons (30ml) fresh chopped mixed herbs
1 tablespoon (15ml) lemon juice
1 oz (25g) brown breadcrumbs
1 teaspoon (5ml) ground ginger
grated rind 1/2 orange

 Method

 Cook onion in butter, on high for 1-2 minutes Stir in the parsley, herbs, lemon juice and breadcrumbs Sprinkle the breadcrumb mix, ginger and orange rind over the fish. Cover and cook on high for 2 minutes. Serve with stir fried vegetables and noodles.
